Blueberry Compote for Perfect Blueberry Pancakes

But go out to IHOP or any other pancake joint and blueberry pancakes are much fancier. There are usually blueberries in the batter, but you also get this gooey, sugary, delicious compote of blueberries on top. Yum.

Now, Jessica, who is a pancake connoisseur, will tell you that my pancakes usually leave something to be desired. I always have the heat up to high so they burn without getting done in the middle or they’re too running so they spread out too much or I use too much baking powder so they get too thick or…

In other words, my pancakes need help.

So, I found a recipe for blueberry compote to mask my craptastic pancakes. And it worked!

This recipe couldn’t be simpler. All you need are frozen blueberries, sugar, and a little water.

In a small saucepan, heat 3/4 cup of frozen (unthawed) blueberries, 3 Tablespoons of water and 3 Tablespoons of sugar. Simmer the berries until they “burst” – about 10 minutes. Keep a close eye on the mixture as you simmer, stirring often so the berries don’t burn.

I had this going while I was making the pancakes. Depending on how long that takes you, you can turn the heat down to keep these warm if you need to. About 5-10 minutes before you’re ready to serve, turn back to medium heat and add the last 1/2 cup of frozen blueberries. The compote will start to get gooey and stick to your spoon – that’s when you know it is done!

Add to the top or pancakes (or waffles or crepes…) with a dollop of whipped cream. This would also be yummy atop a cheesecake. I would have pictures of this, but my camera ran out of battery and by the time it was charged again…well, the berries and pancakes were both long gone!

Note: you can use other kinds of berries if blueberries don’t excite you – or try a mixture of several different kinds of berries.

Instructions

  2. Add the last ½ cup of frozen blueberries and continue to heat. The compote is done when it starts to get gooey and stick to your spoon.
  3. Add to the top of pancakes, waffles, crepes, or cheesecake.
