Blueberry Bundt Cake

I love the combination of lemon and blueberries! This cake has plenty of both… plus wine. What’s not to love about that?

The key to this recipe is to pour the glaze over the cake while it is still hot, so it soaks into the cake. Reserve some to drizzle over after it has cooled as well, so you get that nice glazed look.

Glazed Blueberry Bundt Cake

Whenever you have a cake with berries in it, they tend to sink to the bottom. Don’t worry if they do – it will still taste good! The best way to prevent your berries from sinking is to dust with flour before adding them to the batter.

Blueberry Lemon Bundt Cake

Total Time: 1 hour

Yield: 8-12 servings

Sweet and moist lemon bundt cake, dotted with delicious fresh blueberries.

Ingredients

    Cake:
  • 1 box lemon cake mix
  • 1 package instant lemon pudding
  • 3 eggs
  • ⅓ cup oil
  • ½ cup cold water
  • ½ cup sweet, fruity white wine
  • 1 cup fresh blueberries, tossed in flour
  • Glaze:
  • 1 cup 10x sugar
  • ½ cup butter
  • ½ cup sweet, fruity white wine

Instructions

  1. Combine all the cake ingredients (except berries) in a bowl and beat for 3 minutes.
  2. Pour into a greased bundt cake pan. Add blueberries evenly and allow them to sink into the batter.
  3. Bake at 350 degrees for 40-50 minutes, or until toothpick comes out clean.
  4. Make glaze while the cake is baking. Melt the butter. Add the remaining ingredients and bring to a boil. Stir for 1 minute, then remove from heat.
  5. Immediately when it comes out of the oven, prick cake with toothpicks. Pour 2/3 of the glaze evenly over the cake. Save about one third of the glaze to pour over the top of the cake, once it's removed from the pan.
