I love fresh seafood salad in the summer. It makes such a perfect lunch alone or stuffed in a pita pocket.
Seafood is expensive. I’d love to eat seafood several times per week, but our monthly food budget would be maxed out in a week if we did that.
When I joined #HotSummerEats (read more here – along with a giveaway!), I know I wanted to do some kind of seafood salad, but I also wanted to make it as budget-friendly as possible. So, I decided to make it with imitation crab and lots of fresh flavors, inspired by this South Your Mouth recipe.
And you know what? It was delicious!
