Campfire Duck Bacon Pancakes

Duck bacon? I know it sounds weird, but this bacon is downright delicious!

I was very tentative, because I have tried some products masquerading as bacon that are… well…definitely not good. But this duck bacon from Maple Leaf Farms tastes amazing, plus it has less fat than traditional pork bacon.

Perfect for a breakfast by the campfire!

Growing up, I used to go camping pretty often. We were never really a camping family, but I was a very involved Girl Scout, and our leaders took us camping a few times every summer. I loved breakfast over the campfire. The smoky flavor of imperfect pancakes and crispy bacon… *drool*

My sister is a pancake aficionado, and she has tried dozens of recipes. This is her favorite, which she shared with me. We actually made it when she was visiting last week! It’s perfect over the campfire in a pan or if you aren’t camping, you can of course make this recipe on your stove top like normal.

The key is to use thick-cut bacon for this recipe, which is why Maple Leaf Farm’s duck bacon works so well. It is like a perfectly chewy thick-cut bacon. You can fry it up just like regular bacon. Your whole campsite (or house) will smell great! I like mine really crispy, and because it is thick-cut, it still stays chewy.

Campfire Duck Bacon Pancakes

Course Breakfast

Ingredients

  • 8-10 slices bacon We used duck bacon from Maple Leaf Farms!
  • 1 1/2 cups milk
  • 4 Tablespoons white vinegar
  • 4 Tablespoons butter
  • 2 eggs
  • 4 Tablespoons sugar
  • 2 teaspoons baking powder
  • 1 teaspoon baking soda
  • 1 teaspoon salt
  • 2 cups flour

Instructions

  1. Cook bacon. When cool, chop into small pieces.

  2. Combine milk and white vinegar. Let sit while you combine combine all dry ingredients in a bowl.

  3. Melt butter. Combine with eggs and milk. Add to dry ingredients and mix just until combined. Let sit for a few minutes.

  4. On a heated skillet, place a few pieces of bacon and cover with batter. Flip to finish cooking with batter begins to bubble.
