Chocolate Almond Spritz Cookies

Sometimes the best recipes are happy accidents. One time, for example, I made a pie with iced coffee because I forgot to pick up milk at the store, and now that’s how I make the recipe every time!

This recipe came into existence because my boyfriend Jeffrey is super nosy! :)

I was in the cookie mood one day and asked Jeffrey what kind he wanted. “Chocolate Chip,” I answered before he even had time to reply, because I knew that’s what he was going to say. “But pick something else because I’m sick of chocolate chip.”

So, he requested some kind of all-chocolate cookie. And I happily pulled my not-used-often-enough cookie press from the cabinet so I could make some chocolate spritz cookies.

Who doesn’t love a buttery, slightly crunchy, delicious spritz cookie?

I decided to just go with the recipe on the box. Boring, I know, but it sounded pretty good. My cookie press’ box has a vanilla recipe on one side and a slightly different chocolate recipe on the other.

Well, mid-way through mixing the batter, Jeffrey comes into the kitchen wanting to know what kind of cookie I had decided to make, and I called from the pantry, “the recipe is on the box.”

He picked up the box, checked out the recipe, then set it down again…on the other side.

So now the vanilla recipe is facing up, and I don’t notice because there are no pictures, and the recipes call for mostly the same ingredients. Except the vanilla recipe calls for both vanilla extract and almond extract (and there are a few other slight differences).

And then, to top it all off, I accidentally put in half a TABLESPOON instead of half a TEASPOON.

But the cookies turned out DELICIOUS. Crunchy on the outside, but soft on the inside, and with lots of almost flavor that paired perfectly with the chocolate. I think I’ll make them like this from now on!

Oh, by the way, see that towel in the picture with the lovely grey print? It was a surprise gift that Airbnb sent me in the mail one day! Jeffrey and I have been hosts for a few years now and totally LOVE it. Okay, on to the cookie recipe:

Chocolate Almond Spritz Cookies

Prep Time: 15 minutes

Cook Time: 12 minutes

Total Time: 27 minutes

Yield: 7-8 dozen cookies

Crispy cookies with a soft center, combining the flavors of almond and chocolate for a rich treat.

Ingredients

  • 1 1/4 cups butter
  • 3/4 cup sugar
  • 2/3 cup brown sugar
  • 1 egg
  • 2 Tablespoons milk
  • 2 1/2 cups flour (+ extra)
  • 3/4 cup cocoa
  • 1/2 Tablespoon almond extract
  • 1/2 teaspoon baking soda
  • 1/4 teaspoon salt

Instructions

  1. Cream butter and sugars.
  2. Add egg, milk, and almond extract.
  3. Sift together dry ingredients and add slowly to wet ingredients.
  4. Form the dough into a log. If it is too sticky, add extra flour, a spoonful at a time. Do not add too much flour (dough will be on the sticky side).
  5. Add dough to the cookie press and press out cookies on an ungreased baking sheet.
  6. Bake for 10-12 minutes at 375 degrees Fahrenheit.
  7. Remove from cookie sheet immediately and allow to cool on a rack.
