Back when I first started blogging, one of the first recipes I Pinter-tested was for a healthy cookie pie. While I still do love this recipe, sometimes there’s no substitute for the real thing.
So today, I wanted to share with you a very-unhealthy but totally yummy gooey chocolate chip cookie pie. It’s an awesome treat around the holidays, for a birthday, or whenever you need a special treat. The inside is just slightly gooey and the outside is a little crunchy (without being burnt), just like a perfect chocolate chip cookie.
Add a few scoops of ice cream or cool whip to the top…heaven.
Just try not to think about the amount of butter in it.
I especially love this recipe when I’m having a party because I can serve small slices to my friends instead of it lingering around the house for me to eat myself.
Which brings me to another point…I hate doing dishes.
When I’m entertaining, that hatred is always amplified when I find myself stuck in the kitchen washing dishes instead of entertaining my guests. Nothing is worse than planning a dinner party and hearing everyone laughing, but you aren’t part of it.
Truth be told, whenever I invite people to my house for a meal, I usually just pile the sink full of dirty dishes and forget about until everyone leaves. Which stinks, because by the time I get around to actually washing dishes, they’re crusty with dried, caked-on food that takes forever to scrub off. Ew.
So PAM Cooking Spray really is my best friend.
And I’m not just saying that because they sent me some PAM to test out and an awesome new pie plate for making today’s Chocolate Chip Cookie Pie recipe. I’m saying that because this product allows me to spend less time doing dishes since food doesn’t stick to the pan. Now, this product has also been formulated to leave up to 99% less residue buildup than margarine or bargain brand-cooking sprays, so it’s not going to ruin my dishes either. Who doesn’t love that?
But let’s get into the recipe. Time to make some chocolate chip cookie pie!
To make this recipe, you need: flour, baking soda, butter, brown sugar, eggs, vanilla, and chocolate chips. That’s stuff you should have in you pantry anyway, making this recipe awesome for last-minute shindigs when you don’t have time to run to the store.
Simply cream the butter and brown sugar, add the eggs, vanilla, and baking soda, then slowly start to add the flour. If you add too much flour at once it will *POOF* all over your shirt. Trust me. It’s flour, so sometimes it *POOFS* anyway, usually whenever I’m in such a hurry that I forget to wear my apron.
Once the dough is combined, mix in the chocolate chips and spread the entire thing into your greased pie plate.
Bake for 35-40 minutes in a 350 degree oven. You’ll have to watch it. You don’t want the outside to burn, but it does take some time for the inside to get done. Keep in mind though that it will still be a little gooey in the center. This is cookie pie, so it doesn’t get as well-done as a normal cookie.
If you spray with PAM, seriously, the slices slide right out and you have little to no clean-up to do when you’re done. It’s awesome. AND it has zero calories. Which is really important when you are making a pie that has nearly THREE STICKS OF BUTTER in it.
When I’m making pie with a crust, I also like to spray my work surface when rolling out the dough to prevent sticking. That way, I can get the crust nice and thin.
I also drizzled the top with some chocolate to make it prettier, but you don’t have to take this step. It’s yummy either way!

- 2 cups flour
- ½ teaspoon baking soda
- 1⅓ cup butter (softened)
- 1 cup brown sugar
- 2 eggs
- 2 teaspoons vanilla extract
- 1½ cups chocolate chips
