Chocolate Peanut Butter Cake Cookies

My mom makes the BEST chocolate peanut butter cake. The cake itself is chocolate, but then she tops it with peanut butter icing…. omg, SO GOOD y’all. And I’m not usually a big cake person.

When Better Body Foods sent me some PBfit powdered peanut butter to try, I immediately thought about that cake. I decided to try a cooky version. Less mess, easy to grab and go, I’m on board.

Plus, my in-laws were in town from Alabama (they just left), so I wanted to give them a snack for the road…

Never mind that we ALL overslept our alarms Home Alone style and jumped out of bed an hour late the morning they were leaving. In the chaos of four people trying to get ready in one bathroom and packing their stuff to leave, I totally forgot to pack up some cookies for them to take along home. Whoops. It was an accident, I swear! (But I’m not too sad, because these cookies are DELICIOUS.)

The cookies are thick and cake-like rather than chewy or crispy, though they do get a slightly crunchy texture on the outside from the sugar. The peanut butter powder really shines through without being overpowering. I was a bit nervous that I didn’t use enough, but it was the perfect amount.

Y’all, I am really loving this peanut butter powder. Better Body Foods did send me the powder to try, but isn’t otherwise paying me to promote them. I just loved the powder so much that I wanted to tell you guys about it. It has fewer calories and fat than traditional peanut butter, but packs a lot of punch in the flavor department. I have been adding it to my coffee in the morning, and you can also combine with a little water to make a peanut butter consistency for all your peanut butter needs. YUM. I already used half the jar haha.

Here’s the cookie recipe. It’s so simple! Stock up on Duncan Hines cake mixes when they are on sale, because they are the best. Other brands will do just fine too, though. 🙂

Chocolate Peanut Butter Cake Cookies

These cake-like cookies have a perfectly balanced chocolate peanut butter flavor. They couldn't be easier to make.

Total Time 30 minutes

Ingredients

  • 1 chocolate cake mix
  • 1/4 cup peanut butter powder
  • 2 eggs
  • 1 teaspoon vanilla
  • 1/3 cup + 1 tablespoon vegetable oil
  • 1/3 cup sugar

Instructions

  1. Combine the cake mix, peanut butter powder, eggs, vanilla, and oil together to form a slightly-sticky dough.

  2. Roll dough into 1-inch balls and roll each ball in sugar.

  3. Place on cookie sheet at least 1-2 inches apart and bake for 9-10 minutes at 350 degrees Fahrenheit.

  4. Remove to baking rack to cool.
