Gooey, fudgy brownies are the best. The. Best. I don’t mean to offend those of you who like more cake-style brownies, but you’re wrong.
This recipe is not only fudgy, but includes zucchini, which means it counts as a vegetable side dish. At least, that’s what I’m telling myself to avoid the all-too-appropriate fact that fudgy rhymes with pudgy.
On the plus side, I got new running shoes! So I’m allow to have another brownie, right?
On a more serious note, this recipe is fan-freakin-tastic for all those zucchinis you’ve been harvesting from your garden. It’s about that time of year when it seems like everyone is trying to give them away. The other day, my neighbors thanked me for the bag full of freshly-picked zucchinis left on their porch.

That’s right, they were the victims of drive-by-zucchiniing. The perpetrator was probably some poor gardener who though planting an extra row of zucchinis seemed like a good idea earlier this year, but is now out of space to store all the squash being produced. I can just see her, hair wild, eyes crazed, shoving bags of zucchini into strangers’ arms. Take them. Please. I can’t…Take them! I need to get away from them! AHHHHHHH!
Along with these brownies, I definitely recommend these chocolate chip zucchini cookies, and we’ll be posting some other zucchini recipes later this month. Neighbors are much more welcoming to a plate full of baked goods than yet another bag full of vegetables.
