No, not the kind made with meat and cheese! These are the candy club sandwiches, like the ones you can get at Costco. I believe the Boy Scouts also used to sell them as a fundraiser.
In any case, we’ve been making these for years. They are always a big hit. And they’re so easy that even if you are HORRIBLE in the kitchen, you can make these and totally impress your friends. No use of the oven or stove top required!
To make these peanut butter club sandwiches, you need saltine crackers, peanut butter, chocolate for melting and sprinkles for decoration (optional). I buy the chocolate wafers that are made specifically for melting, which you can usually find near the chocolate chips at the grocery store or near the cake decorating aisle at craft stores (like Micheal’s or A.C. Moore).
Start by making peanut butter sandwiches with the saltine crackers. Easy enough, right?
Melt the chocolate in the microwave slowly. Be careful not to put it in for too long at once or the chocolate will burn.
Then, dip each one in chocolate, and before the chocolate cools, sprinkle with your decoration. I set each one on wax paper to dry. During the summer or if it’s really hot in the kitchen, I also sometimes put them in the refrigerator so they firm up more quickly.
That’s it. Seriously. It’s so easy that you don’t even need a printable recipe for this one. You can also drizzle white chocolate over the top if you want to get extra fancy. My grandmother cuts them in half before dipping when she makes them to create more bite-sized treats, which is also an option.
