Today I am posting an old recipe from my family that has been passed around and revised to suit our tastes. Aren’t those old family recipes the best? (Plus, scroll to the end to enter a $50 giveaway!)
This old fashioned macaroni salad is a Pennsylvania Dutch recipe (like our PA Dutch Pot Pie). The recipe originated with my Grandma Reitz. My mom changed it slightly and now I make it, too. When we growing up we would go to my Grandmas house on a Sunday morning and pick her up to go to Sunday School and church. After church we would finish making the lunch she had gotten started before we left.
It is a macaroni salad recipe where you cook the dressing for the salad. I know that sounds weird if you are used t just throwing everything into a bowl, like for a pasta salad. It is a little like an Amish macaroni salad. This recipe is always best to make early in the day and eat later. It seems better when it sits for awhile.
My husband said he was hungry for homemade macaroni salad. So I decided I would make barbequed chicken thighs and old fashioned macaroni salad so we could forget about this cold winter.
Don’t wait until summer to make the salad. Let’s chase the winter away and think summer by making the old fashioned macaroni salad. Maybe if we all do it, we’ll wake up tomorrow and it will be springtime.
