Shamrock Mint Sugar Cookies

Here in Norfolk, we take St. Patrick’s Day seriously!

The neighborhood where I live, Ocean View, has a HUGE St. Patrick’s Day parade every year. We’re talking bagpipes, step dancers, and lots of random people dressed in green from head to toe. We were even in the parade last year with the animal shelter where Jeffrey and I volunteer.

I think I’ve told this story before… but in case you are new to The PinterTest Kitchen…

The very first year I moved to Norfolk, my sister Jess wanted to visit. I had been living in Norfolk for less than a month and Jeffrey had deployed. I remember saying to her, “I think there is some kind of St. Parry’s Day celebration or something. It might just be for kids. I’m not really sure, but we can go if you want. It’s probably not a big deal”

And then, as we’re driving into town to my house two days before… we see the bleachers… and the cars parked to save spots… and the signs about road closures.

Yes… it is a big deal.

These minty sugar cookies are perfect for any St. Patrick’s Day celebration. Jess made them last year and they were a big hit!

She also made some using vanilla extract instead of peppermint, so if you are not in love with minty-flavored baked goods. I personally love the vanilla version better, but both versions are delicious.

Shamrock Mint Sugar Cookies

The key for perfect frosted cookies is to wait until the cookies have cooled before you start frosting them. If they are still warm, the frosting will melt and you’ll have a big mess.

Shamrock Mint Sugar Cookies

Course Dessert


Cookie Dough:

  • 2 cups sugar
  • 1 cup soft butter or margarine
  • 2 eggs
  • 1 cup buttermilk
  • 1 1/4 teaspoons baking soda
  • 2 teaspoons baking powder
  • 1 teaspoon peppermint extract
  • 7 cups flour


  • 1 pound powdered sugar
  • 5 tablespoons butter
  • 1 teaspoon peppermint extract
  • 2 Tablespoons milk


  • Colored sugar sprinkles
  • Jimmies
  • Other candies or food coloring for decoration


  1. Combine all of the dough ingredients except the flour in a large bowl.

  2. Slowly mix in the flour.

  3. Take a small piece of dough and form into a flat ball. Sprinkle a small amount of flour on your work surface and roll the ball into a sheet, being careful not to roll too thin.

  4. Use cookie cutters or a glass to cut the cookies and place on a cookie sheet. (Decorate with sprinkles at this point if you will not be icing the cookies.)

  5. Bake at 350 degrees Fahrenheit for 7 minutes until the bottoms are just starting to get slightly brown. Do not wait for the entire cookie to get golden brown. 

  6. Combine icing ingredients and frost the cookies when they've cooled. (Add food coloring if you want a green color.)
