Smokey Coconut Oil Paprika Chicken Drumsticks

I know this recipe sounds weird. Smokey? Coconut oil? Paprika? But I promise you, these drumsticks are DELICIOUS. The skin gets nice and crispy, and the paprika gives you a mouth-watering flavor.

Plus, these drumsticks have a super smokey flavor, thanks to my special secret ingredient… Smokin’-Os!

So in case you haven’t tried out Smokin’-Os yourself, let me give you the rundown. These are little wooden rings that you use on your gas grill. You can also use on your charcoal grill or in your smoker, but they are best used on a gas grill, in my opinion, because they add a ton of flavor.

When we moved into our current house, the previous residents left a pretty nice gas grill here. As my dad would say… SCORE! Not to look a gift horse in the mouth, but gas grills don’t typically add as much flavor to your food as a charcoal grill or smoker. Smokin’-Os solves this problem.

They are super easy to use. You just get your grill going (really hot), and add the wood ring to the hottest part. It will start smoking (if it catches fire, just blow it out). Move it to a cooler part of the grill, turn down the heat, and add your food. The ring will smoke, smoke, smoke for at least 20-30 minutes, adding yummy flavor to your food. Just keep the lid on your grill to keep the smoke inside as much as possible.

What I really appreciate about Smokin’-Os is that there are no chemicals or additives… they are just wood. But, unlike wood chips, you don’t have to soak them. I hate having to remember to do prep work hours before I’m ready to start cooking. I always forget!

Smokey Coconut Oil Paprika Chicken Drumsticks

Crispy, smokey chicken drumsticks made using coconut oil.

Ingredients

  • 6 chicken drumsticks
  • 1 cup coconut oil
  • 2 Tablespoons paprika
  • 1 Tablespoon Italian seasoning
  • 1/2 teaspoon crushed red pepper flakes
  • salt and pepper to taste

Instructions

  1. Melt the coconut oil.
  2. Add paprika, Italian seasoning, crushed red pepper flakes, salt, and pepper and stir to combine.
  3. Pour into bag or shallow dish. Add chicken and roll/toss to coat chicken completely.
  4. Grill until chicken reaches an internal temperature of at least 165 degrees Fahrenheit and skin is crispy. Use Smokin'-O if desired, to add extra smokey flavor.
