Two-Ingredient Pumpkin Cookies

With the holidays coming up, I’ve been on the look out recently for new easy cookie recipes on Pinterest. I’m willing to test out any cookie that sounds yummy, especially when the recipe involves spicing up a cake or cookie mix. It can’t get any easier than that!

Remember Allison’s So-Easy-You-Want-to-Kiss-Someone Chocolate Pumpkin Muffins? Two ingredients. Super easy and definitely delicious!

So when I found a pin for 2 Ingredient Pumpkin Cookies from Come What May, I had to try them out. I figured that since it’s the same concept as allison’s chocolate pumpkin muffins, it was a shoo-in! Meh… By no means were these cookies horrible. But after taste testing the first one, it didn’t bother me to keep eating them. And cookies almost ALWAYS bother me to keep eating them!

But after thinking about it for a little bit, maybe all three of us Boyer girls just become cookie snobs. I mean, Mom (Sharon) is definitely known for her awesome Christmas cookie plates that she gives out every year. Consider that, I recommend you try they out for yourself if you’re interested.

When I saw this pin on for Strawberry Lemonade Cookies, I intrigued because A) I love lemon flavored baked goods B) it wasn’t your run of the mill chocolate chip cookie and C) it involves a cake mix, and how much easier can a recipe get? This recipe was originally pinned by Sylvia Avery, who pinned it from realmomkitchen.com.

Personally, I’m not the biggest fan of these cookies. But I had a friend try them and she liked them! I think it all depends on wether or not you like strawberry cake. So if you aren’t a fan of strawberry cake, you may want to try something else. But if you do, give these cookies a try.

Cinnamon Cake Mix Waffles with Warm Cinnamon Roll IcingI think waffles got me through the the start of my freshman year of college. No joke. The dining hall had a self-serve waffle station that was open regardless of whether it was actually breakfast time or not. During that awkward first week of not knowing anyone, a group of girls and I who shared several classes together decided to get breakfast together in between classes one day. It soon became a daily event and waffles were a common occurrence. I’ve been friends in one way or another with these girls ever since.

So clearly, it was the waffles that got me through that awkward phase in the beginning.

But I digress… My point is that I’m always looking for a good waffle recipe that’s not complicated. I found this pinned recipe for waffles using a cake mix and thought I’d give it a try. Major brownie points (or should I say waffle points?) to Amanda for originally pinning this recipe from lovefromtheoven.com, because this is THE best waffle I’ve ever made in my life! If you can make a cake from a box, you can make these waffles.
