Triple Chocolate Truffles #Choctoberfest | The PinterTest Kitchen

I work at Benigna’s Creek Winery and we have a wine and truffles event in February. It’s always really special to make homemade candies. The truffle recipe we use, however, is very labor intensive. I saw a truffle recipe on Pioneer Woman that looked a lot easier, so I decided to try a version for #Choctoberfest.

Thanks to one of our awesome sponsors, Forte Chocolate, I had a gorgeous and delicious Fireweed Honey in Dark Chocolate to coat the truffles. It really took them over the top.

Forte Chocolate

I love how the dark chocolate coating pairs perfectly with the filling. They are very rich without being too sweet. As I mentioned, it is really special to make homemade truffles. Homemade candies are decadent and the perfect gift. You can dress them up with sprinkles for any special occasion, or drizzle with a little white chocolate.

Triple Chocolate Truffles

These decadent chocolate truffles feature three different types of chocolate.

Servings 20 truffles

Ingredients

  • 7 ounces sweetened condensed milk
  • 8 ounces chocolate of your choice (I used 4 ounces each of bittersweet and semisweet)
  • 1/2 Tablespoon vanilla
  • 4 ounces Forte Fireweed Honey Dark Chocolate for dipping
  • 1 teaspoon shortening

Instructions

  1. Heat the bittersweet chocolate, semi-sweet chocolate and sweetened condensed milk and vanilla in a double boiler over low heat.

  2. Stir the ingredients until the mixture resembles a marshmallow texture. Be careful that you don't get it too hot - it should not be boiling.

  3. Remove from heat and transfer to a bowl. Cover and chill for 1-2 hours.

  4. Melt the Forte chocolate with the shortening in the microwave in 20-second increments. Stir after every 20 seconds in the microwave until melted and nice and smooth.

  5. Roll the chilled chocolate mixture into 1" balls, and dip each in the Forte chocolate mixture. Set on a silicone baking mat or waxed paper to harden.

  6. Add sprinkles or a drizzle of white chocolate if desired.
