Okay, I’ll say it: Salads are way too high-maintenance. Come on, we were all thinking it.
Unless you want a boring bowl of sad lettuce, salad requires you to purchase extremely perishable ingredients that need to be washed, chopped, and tossed before eating. And you need to eat those same ingredients several days in a row or you’ll find yourself with a fridge full of rotting half-used veggies.
I was able to sample several of the brand new Eat Smart Salad and Stir Fry Kits, and oh baby, oh baby. The first one I tried was the Wild Greens and Quinoa Salad Kit, which has kale, beet greens, julienned broccoli, carrots, red cabbage, crispy quinoa and almonds, plus feta cheese and an avocado herb dressing.
Avocado herb dressing, people. Avocado! Shut up and take my money.
Seriously, I think that little packet of crispy quinoa changed my life. I’ve never tried quinoa before, and certainly never thought to put it in a salad. Now, I don’t know how I will eat salad without it.
Not only do these kits make it very fast and easy to throw together a meal, they’re also each packed with five to seven delicious and beneficial superfoods, like brussel sprouts, sugar snap peas, and bok choy, and they also come with yummy toppings like dried cranberries and peanuts.
They are delicious as a stand-alone lunch or even dinner. Add some grilled chicken, tuna, or hard-boiled eggs for a bit of a heartier meal. Or try it as a side for this oven roasted chicken and potatoes meal.
We taste-tested two of the other Eat Smart salad kits as well – Sweet Kale (kale, green cabbage, broccoli, Brussels sprouts, chicory, roasted pumpkin seeds and dried cranberries, plus a poppyseed dressing) and Ginger Bok Choy (sugar snap peas, carrots, Napa cabbage, broccoli, bok choy and red cabbage, plus peanuts and a ginger sesame dressing). Both were delicious, and no need for cooking and clean up? I’m all about that.
We also tried two of the Eat Smart Stir Fry Kits. The Kale and Red Chard has broccoli florets, red chard, kale, snow peas and carrots with stir fry sauce, and the Shanghai Blend (pictured below) has Brussels sprouts, bok choy, kale, snow peas and carrots with a tangy hoisin sauce.
I added some beef strips, rice noddles, and a sprinkle of sesame seeds, and ta da! A really hearty dinner, complete with a healthy serving of veggies, in about 15 minutes. Two thumbs way, way up.

Lucky for us, there’s a Harris Teeter with Eat Smart products only a few miles from our house. Thank goodness, because I’m going to have to replenish our stock fairly regularly.
